Chicken Meunière



This chicken was so simple to make and it was surprisingly delicious. The butter adds additional flavor and helps to keep the chicken tender. Green beans (or asparagus) and mashed potatoes would be great additions as sides. Let us know what you think!

Low-Carb Chicken Shawarma


I wanted to try something new and landed on Chicken Shawarma! Don’t judge me, but I didn’t even know what Shawarma was until I watched the ending scene in The Avengers 😳 But to be fair, I didn’t really grow up in a food-venturous household and that’s ok, we’re trying new things now! So join me on this journey in making this superbly delicious chicken!

Ingredients

¼ Whole Cabbage
2 Chicken Thighs
⅓ cup Yogurt
2 tbsp Garlic powder
¾ tbsp Turmeric powder
2-3 tbsp Sam’s Special Taco Seasoning (see below)

Garlic Mayo Sauce (optional)
Dash of Lemon juice
½ tsp garlic powder
½ cup mayo
1 tbsp vinegar
Salt (to taste)

Place the chicken thighs in a bowl. Cover in yogurt, then add the garlic, turmeric, and taco seasoning. Bake in the oven, skin-side up, in a pan with a rack for 30-40 minutes at 190°C (350°F). Separately, cut the cabbage into strips and plate with your shawarma. Drizzle a little of your Garlic Mayo sauce on top and you’re good to go!

[Sam’s Special Taco Seasoning]
2 tsp paprika
1 tsp cumin powder
1 tsp garlic powder
½ tsp cayenne pepper
½ tsp white pepper
1 tsp chili powder
1 tsp oregano (or Italian herb mix)
1 tsp salt

If you're not looking to be adventurous with what you eat here in Japan, there are still many options available. Anytime a friend or family member comes to visit, we always recommend chicken nanban. This dish is a crowd-pleaser and you can find it at most family restaurants here in Japan. It consists of fried chicken, a sweet and sour sauce, and an egg salad topping. Note: I used chicken thigh in place of chicken breast.

Ingredients:

Chicken Thigh [Salt, Black Pepper, Flour, An Egg]

Nanban Sauce [Soy Sauce, Vinegar, Sugar]

This was definitely one of the more extravagant looking dishes I made this year. Yet, the cooking process required very little. If you look closely, you'll notice that the main items in this dish are cod, eringi mushrooms, and breadcrumbs. Simple, right? These bagels were amazing! Since we live in Japan, it's extremely hard to find good bagels that have the perfect combination of a soft and chewy inside yet a bit of a crunch on the outside. After baking, these are best served by splitting them in half, toasting on both sides, and adding butter or cream cheese. Enjoy! 🥯

Hamburg w/ Comeback Sauce


One of the first cookbook recipes I made, this Japanese-style pan-fried meatloaf was delicious and extremely easy to make. Simply mix together the required ingredients for the hamburg and shape them before pan-frying on both sides. Once they look about halfway done, add in the sliced potatoes and take everything out after a nice golden color begins to develop. Finally, plate your food and drizzle on some comeback sauce.


*If you’re looking to incorporate some more color onto your plate, add purple beans to your rice when cooking it in the rice cooker and make a vibrant salad to go along with your meal.


Ingredients:

Hamburg [Ground Meat, Onions, Salt, Pepper, Panko, Milk, 1 Egg]

Boiled & Sliced Potatoes [Salt, Pepper]

Comeback sauce [Mayo, Ketchup, Worcestershire sauce]

Rice

Salad
