Spicy Chicken w/ Cherry Tomato Sauce

Have some leftover cherry tomatoes laying around and don't know what to do with them? Well, this recipe was made just for you.

NOTE: For this recipe, you'll need an immersion blender and an oven.

Spicy Chicken Thigh Ingredients:

Boneless Chicken Thigh [Cayenne, Garlic, Salt, Black Pepper, Paprika, Italian Herb Seasoning]


Season the chicken thigh and pan-fry skin side down for 7-9 minutes or until golden brown. Flip the chicken and cook for another 7-9 minutes or until cooked through.

Cherry Tomato Sauce Ingredients:

1 pack cherry tomatoes
1-2 garlic clove(s)
¼  large onion
Thyme (*use sparingly)
Ground Black Pepper
Olive Oil


1. Spread the cherry tomatoes out onto a pan and cover them with olive oil. Sprinkle with some salt and heat at 180 celsius for 15 minutes.

2. While the tomatoes are cooking, dice the onions and finely chop the garlic.

3. Cook the onions in a hot oiled pan and sprinkle them with a bit of salt to speed up the process. When the onions begin to soften, turn the heat down to medium and add in the tomatoes followed by the garlic. Season with basil, thyme, oregano, salt, and pepper.

4. Once the tomatoes begin to look shriveled and the garlic changes color, pour everything into a cylindrical container. Then, use an immersion blender to create the sauce.

5. Add salt and pepper to taste. When ready to use, treat like any other jarred pasta sauce.
